Chemmeen manga curry is a much-loved dish from Kerala’s backwaters and coastline, where fresh prawns meet tangy raw mango in a creamy coconut gravy. Juicy prawns are simmered with raw mango, shallots, green chilli, ginger and garlic, then soured with kudampuli and finished with a tempering of mustard, fenugreek, dried chilli and curry leaves. You get a curry that’s rich, gently tart and full of homestyle flavour.

It comes fully cooked in an easy-open can, so all you have to do is heat and serve.
